Offering citrusy flavours of orange and tangerine, a cocoa back-note and a creamy finish, Santa Maria de Lourdes is a truly special rare coffee that showcases some of the finest work of Central American producers.
The Santa Maria farm sits close to the Honduran border in Dipilto, Nicaragua, stretching across dense forest and rolling hills. The Peralta family, which owns the farm, has been growing since the start of the 20th century but in 2008 it changed direction, developing new, specialty coffees for European tastes to boost the country’s burgeoning reputation for unique beans.
Santa Maria coffee beans are selectively picked and the washing process starts at the farm, where the family ferments it for eight-hour periods dry, in water, and dry once more. The coffee is then transported to the San Ignacio Mill, which only processes microlots, where it’s dried on multi-layered raised beds, raked and turned regularly, then covered at night to protect from moisture.
