The Chire wet mill lies within its eponymous village of the Sidamo sub-region, an area that has gained itself a high reputation in the world of Ethiopian coffee. Its heady, high growing altitudes (some of which clock in at over 2200m above the sea), fertile soil and plentiful regular rainfall make it a perfect environment for the growing of exceptional coffees. As with most of Ethiopia, the predominant coffee variety is still the largely uncatalogued wild coffee native to the region. It is this that produces those flavours so uniquely tied to this country.

This coffee is fermented for between 36-48 hours before the beans are thoroughly washed of their cherry and graded by density. They are then dried in the sun on raised African beds for 12-15 days, by which time they will attain their ideal moisture level. During the day they are hand-raked at intervals to ensure even drying and covered when the sun is at its zenith to avoid burning. At night, they are then covered to protect from dew and evening rains. Once dry, it is transported to Addis Adaba for dry-milling, grading and sorting by quality before being bagged in GrainPros for export.
