An experimental Carbonic Maceration from the El Vergel Estate yielding a distinctly crisp and citrus-forward cup profile, a unique characteristic for the Java varietal.

CO2 is induced for 96 hours at a high pressure, breaking down the cascara during an anaerobic fermentation. The Java cherries are sun-dried on raised beds for 25 days and stabilised for 45 days before milling.

Packaging

Each coffee from the Summit Collection comes in a limited edition, foiled tin and contains 180g of premium specialty coffee.

The coffee stays fresh for up to three years once sealed, thanks to our special gas-flushing packaging. 

We replace the oxygen with argon gas, which pretty much stops the coffee from aging and keeps all that delicious flavor locked in. 

Our bags are produced in a carbon offset processing process and are fully recyclable in the UK – just pop them in with your soft plastic recycling at your local supermarket.

Meet the Producer

The Bayter Family

In 1995, the Bayter Family established El Vergel Estate, initially making it one of Colombia's most productive avocado farms. But following a sharp decline in avocado prices, the family introduced coffee varieties in 2009 to diversify their crops and stablise income.

Applying the same passion and dedication into coffee as they had with avocados, the Bayters embarked on a journey of knowledge, experimenting with varieties and different types of fermentation to push coffee production to its limits.

Little by little they became pioneers of innovation and quality. Currently the Bayter family carries out exhaustive research on bacteria and yeasts to control fermentation together with tireless experimentation of processes, reaching unprecedented levels of excellence in their coffees.
